Ingredients:
- 1 cup olive oil
- ¼ cup red wine vinegar
- 3 tbsp ground cumin
- 5 ½ tbsp ground coriander
- 10 ½ tbsp salt
- 5 ½ tbsp sugar
- ½ tbsp cayenne pepper
- 4 large chicken breast halves with skin and ribs, cut crosswise in half
- 4 chicken legs
- 4 chicken thighs
- ¼ cup fresh parsley, minced
Serves 6 People.
Cooking:
- Heat the oil in a large saucepan or soup pot over medium heat.
- Once it shimmers, add the onion and cook, stirring often, until lightly browned, 5 to 7 minutes.
- Stir in the garlic and cook until fragrant, about 30 seconds. Turn off the heat.
- Preheat outdoor grill to medium high heat.
- Place chicken on the grill for 7-8 minutes.
- Flip over and cook an additional 7-8 minutes or until no pink remains
